








Salsiccia e Fagioli (sausage & beans, Bolognese)
I first had this dish in my favourite Tavern in Bologna. It warmed my soul. So simple, but so comforting and tasty. It inspired this version.
Tender, organic canellini beans and coarsely broken-up pork sausage, lovingly simmered in white wine, San Marzano tomatoes, and choice aromatics. Plenty of cracked pepper to bring it alive. Some the beans melt into the sauce making it unbelievably creamy.
Enjoy on its own, perhaps with a beautiful slice of sourdough for mopping the plate. Or use as a healthy, crowd pleasing side dish.
