











Pappardelle with Spicy Sausage Ragu
This is a relatively traditional Bolognese (pork) sausage ragu, except for the chili.
Chili is not a traditional ingredient in Bologna. Nevertheless, as a slight nod to the Nigerian side of my family, I really love this version. It’s not crazy spicy, but the heat gives it a wonderful depth.
Portion size: One single portion. 110g of pasta. 130g sauce.
