My biggest inspiration for pursuing Bologna Pasta Project is to pay homage to my favourite tavern in Bologna. It’s no exaggeration to say that I love that place.

Walking through their non-descript wood door on a quite street, I am filled to the brim by the spirit of generosity, hospitality and conviviality. Great food and wine flows. We feel like family. Occasionally, a surprise plate or glass arrives at the table unexpectedly. It's an marvelous feeling. Simply the best.

I do my best to embody this feeling through my weekly pop-up menus. But cooking for guests in person enables the food and happy mood to flow on a higher level.
